A taste of the south of France….
Bouillabase is one of our favourite dishes to make in the kitchen, everything about it is just so elegant, fresh, delicious and reminiscent of the south of France with all of its beauty and rich traditions. We make our bouillabase with the best ingredients that we can find, starting with fragrant fennel and roasted tomatoes for the broth and then adding the best seafood from our beautiful West Coast. Each bouillabase set comes with the broth ready to heat up and all you need to do at home is add the fresh seafood that we have prepared for you; it simmers for just a few moments and then you are ready to ladle this gorgeous soup into your favourite bowls, top with the rouille (red pepper mayonnaise, the traditional French accompinament), and a wedge of our freshly baked focaccia.
We love to serve a crisp salad of new spinach with this meal, and we have the first local harvest spinach coming in this week!
For dessert we are making a lovely French plum tart, a perfect ending to this late Spring dinner.
